Since I've used an electronic pressure cooker for years, I understand the principle but cooking with a cataplaña brings it to a new dimension. Not just a fish stew pot, the cataplaña is versatile and convenient, yes, but it also awakens new layers of flavour and does it in a healthy, fat free fashion. Love it.
