How to Use a Portuguese Chorizo Grill

Lightly score your chorizo at approximately 1cm intervals and place it across the raised section of the grill.

Pour a small amount of suitable high-proof alcohol, such as Portuguese aguardente or grappa, into the base of the dish. Approximately 10ml is usually sufficient.

For best results, gently pre-warm the terracotta dish in the oven or on a suitable hob before use. Remove from the heat, place on a heat-resistant surface and carefully ignite the alcohol in the base.

As the flame cooks the chorizo, the skin begins to crisp and release its wonderfully rich, smoky aroma. Using tongs, turn the chorizo regularly so that it cooks evenly on all sides.

Once cooked through, transfer the chorizo to a serving plate and allow it to cool slightly before slicing. Serve with fresh crusty bread, olives and your favourite drink for a simple Portuguese petisco.

What Chorizo Should I Use?

Most varieties of chorizo can be cooked using an Assa Chouriço, but we particularly recommend traditional Portuguese chouriço.

Portuguese chouriço generally has a higher fat content than many other styles of chorizo, helping it cook beautifully over the flame. It is also commonly seasoned with paprika, garlic and other spices that become wonderfully aromatic as the sausage grills.
